5-Minute Mushroom Omelette

This omelette is so quick and easy to make, you'll want to make it for breakfast every day.

Ingredients: 1/2 cup sliced mushrooms 1 tablespoon olive oil or butter 4 eggs salt and pepper, to taste Instructions: 1. Heat olive oil or butter in a skillet over medium heat. Add mushrooms and cook for 3-5 minutes until softened.2. Whisk together eggs, salt and pepper. Pour into the skillet and scramble until cooked through.3. Serve with your favorite toppings, such as cheese, salsa, avocado or hot sauce.

Vegetarian Mushroom Omelette

1/4 cup onion, diced

1/2 cup greek yogurt

2 eggs

1 tsp. olive oil

salt and pepper, to taste

Instructions:

  1. Preheat a large skillet over medium heat. Add the mushrooms and onion, and sauté until soft.

-3. In a small bowl, whisk together the greek yogurt, eggs, and olive oil. Add salt and pepper to taste. Pour the mixture into the pan over the mushrooms and onion, stirring gently to scramble the eggs.4. Once the eggs are cooked through, fold the omelette in half and serve hot. Enjoy!

Savory Mushroom Omelette

Ingredients:

3 eggs

1/2 cup chopped mushrooms

1/4 cup shredded cheese

Salt and pepper, to taste

  2. In a medium bowl, whisk together eggs, mushrooms, cheese, salt and pepper. Pour mixture into the skillet.

Spicy Mushroom Omelette

This recipe for a vegan Spicy Mushroom Omelette is easy to make and is perfect for a quick and healthy breakfast or lunch.

Ingredients:

1 tablespoon olive oil

1/2 onion, chopped

8 oz mushrooms, sliced

1/4 teaspoon ground black pepper 3/4 cup almond milk or other plant-based milk 1 teaspoon apple cider vinegar or distilled white vinegar 1/2 cup all-purpose flour 1 teaspoon smoked paprika 1/4 teaspoon cayenne pepper, optional 6 large eggs, beaten*

Instructions:

heat the oil in a large skillet over medium heat. Add the onions and cook until softened, about 5 minutes. Add the mushrooms and black pepper and cook until the mushrooms are soft, about 5 minutes.

Preheat the broiler. In a small bowl, whisk together the almond milk and vinegar. In a medium bowl, whisk together the flour, smoked paprika and cayenne pepper (if using). Pour the mixture into the skillet and cook for about 2 minutes, or until bubbling.

Add the eggs and scramble until they are cooked through, about 2 minutes. Transfer to a broiler-safe dish and broil for 2-3 minutes, or until golden brown. Serve immediately.

# Introduction

Mushrooms have become one of my favorite ingredients to work with ever since I went vegan – there are so many different types and each one has its own unique flavor and texture. This Spicy Mushroom Omelette is one of my favorite recipes that I've created using mushrooms. It's easy to make, healthy and most importantly – delicious!

The omelette is made up of three main parts: The onion & mushroom mixture, the almond milk mixture and the egg mixture. The onion & mushroom mixture is cooked in olive oil until softened before adding the mushrooms which are then cooked until they are soft. The almond milk mixture is made by whisking together almond milk and vinegar which will create a 'breading' for the eggs. The egg mixture is made by beating together eggs and then pouring it into the skillet with the onion & mushroom mixture. It's important to let this cook for a few minutes so that it forms a thick base before transferring it to a broiler-safe dish and broiling for 2-3 minutes.

Serve up your Spicy Mushroom Omelette with some toast or on its own for a quick and healthy breakfast or lunch!
