Instructions:
In a small bowl, whisk together eggs, milk, salt and black pepper. Set aside.
In a large skillet over medium heat, melt butter or margarine. Add onion, bell peppers and mushrooms; cook until vegetables are tender. Stir in flour until well blended; gradually stir in chicken broth and thyme. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat to low; stir in egg mixture until slightly thickened. Sprinkle with cheese. Cook for 2 minutes or until cheese is melted. Serve immediately.
